- Baking tray
- Large frying pan
- Saucepan with a lid
- 4 meal-prep containers
Ingredients
- 800 gturkey breast, cut into strips— about 200 g per bowl
- 280 grice— weighed dry
- 600 gcauliflower florets
- 5 tbspsoy sauce
- 3 cmfresh ginger, grated
- 3 clovesgarlic, grated
- 2 tsptoasted sesame oil
- 2 tsprice vinegar— optional, for sharpness
- 1 tsp (about 3 g)cornflour— optional, to thicken the sauce
- 2spring onions, sliced
How to make it
Roast the cauliflower at 220 °C for 15–18 minutes until the edges catch colour but the stems still have bite. It gets hot a second time when you reheat the bowl, so stopping it short here is the point.
Cook the rice according to the packet and leave it covered off the heat.
Stir the soy sauce, ginger, garlic, sesame oil and rice vinegar together. If you want the sauce to cling rather than pool, whisk the cornflour into 3 tablespoons of cold water and keep it beside the pan.
Sear the turkey strips in a very hot dry pan in two batches. Turkey breast is lean enough to go from juicy to dry in under a minute — pull it as soon as the pink is gone.
Return all the turkey to the pan, pour in the sauce and let it bubble for 30 seconds. Add the cornflour slurry if you are using it and take the pan off the heat the moment the sauce coats the strips.
Build the bowls with rice, cauliflower and turkey, spoon the sauce over and finish with spring onions. Cool completely before the lids go on; keeps 4 days.

Variations
Half cauliflower rice
Replace half the rice with cauliflower rice. That takes the bowl to roughly 400 kcal and 52 carbs while the protein stays put — the version for a deficit phase.
Chicken instead of turkey
Chicken breast cooks the same way and lands within a few grams on every number. Use whichever is better value that week.
Coach's tip
This is the lightest bowl of the week: 52 g of protein for 530 kcal, which is a ratio nothing else here beats. Put it on a rest day, or on the day you know dinner is going to be big — the protein still lands and the calories leave you room.
