Greek Chicken Bowl
Oregano-and-lemon chicken with crisp roast potatoes, a sharp cucumber-tomato salad and tzatziki made from skyr rather than full-fat yogurt. It is the highest-protein bowl in the collection at around 64 g, and it does not taste like diet food.
Under 700 kcal and at least 50 g protein per serving — enough protein to hold on to muscle while you eat less.

Ingredients
- 800 gchicken breast
- 1 kgpotatoes— cut into 2 cm cubes
- 1 tbspolive oil
- 2 tspdried oregano
- 1lemon— zest and juice
- 2 clovesgarlic, crushed
- 480 gskyr— for the tzatziki
- 150 gcucumber, coarsely grated— for the tzatziki
- 300 gcucumber, diced— for the salad
- 300 gcherry tomatoes, halved
- 1 (about 120 g)red onion, thinly sliced
- 2 tbspdill, chopped
- 1 tspfine salt
How to make it
Heat the oven to 220 °C. Toss the potatoes with half the oil, the oregano and half the salt, spread them out with space between them and roast for 30–35 minutes, turning once.
Make the tzatziki: squeeze the grated cucumber dry in your hands — really dry, or it waters down in the fridge — then stir it into the skyr with the garlic, dill, half the lemon juice and the rest of the salt.
Flatten the chicken breasts to an even thickness and rub them with the remaining oil and the lemon zest. Cook 4–5 minutes per side in a hot griddle until just done, then rest for 5 minutes before slicing.
Toss the diced cucumber, tomatoes and red onion with the remaining lemon juice.
Build the bowls with potatoes, salad and sliced chicken, and spoon the tzatziki over the top. For meal prep, pack the tzatziki in a separate pot so the salad stays crisp.

Variations
Make it a gyros bowl
Crumble 30 g of feta over each bowl and add a pinch of cinnamon to the chicken rub. It costs about 80 calories a bowl and pushes the fat up, but it turns a lean lunch into something you would actually order — worth it on the day you are closest to giving up on the diet.
Coach's tip
Skyr tzatziki is the trick worth stealing from this recipe. A shop-bought tub is mostly fat and turns a lean bowl into a heavy one; the skyr version tastes sharper, adds about 12 g of protein per bowl, and takes two minutes. Make a double batch and put it on everything.
