What you need
- Bowl
- Whisk or electric beaters
- Small dry frying pan
Ingredients
- 500 glow-fat quark
- 4 tbsp (60 ml)milk— or a plant alternative
- 200 gmixed berries
- 2 tsp (about 14 g)honey— or maple syrup
- 30 gflaked almonds
How to make it
Toast the flaked almonds in the dry pan over medium heat for 2 minutes, watching them the whole time — they go from pale to burnt in about fifteen seconds.
Beat the quark with the milk for a full minute with a whisk or beaters. It changes completely: from dense and claggy to light and almost mousse-like. Stirring it with a spoon does not do this, which is why plain quark has a reputation it does not deserve.
Crush a third of the berries with a fork and fold them through so the quark streaks pink, then divide between two bowls.
Top with the remaining whole berries, the almonds and the honey.

Variations
Chocolate
Beat 1 tablespoon of cocoa and 1 teaspoon of honey more into the quark and swap the berries for a sliced banana. About 70 kcal more per portion, and it reads as a dessert rather than a snack.
Vegan
Use 400 g of unsweetened soy yoghurt and maple syrup instead. Protein lands at roughly 14 g per portion rather than 36 — a different snack, honestly labelled.
Coach's tip
The snack for the 4 p.m. gap between lunch and training: 36 g of protein, under 350 calories and nothing to cook. If you lift in the evening and struggle to hit your protein target, this one bowl usually closes the gap on its own.
