Smoky Roasted Chickpeas
Chickpeas dried hard, roasted until they rattle in the tin and tossed in smoked paprika and cumin only after they come out. A savoury snack, not crisps.

What you need
- Baking tray
- Clean tea towel
Ingredients
- 2 tins (800 g)chickpeas— drained and rinsed — about 480 g
- 2 tbspolive oil
- 2 tspsmoked paprika
- 1 tspground cumin
- 1/4 tspcayenne pepper— optional
How to make it
Heat the oven to 200 °C. Roll the drained chickpeas in a tea towel until they are properly dry and rub off any loose skins. Dryness is the whole recipe — a wet chickpea steams and ends up chewy, and no amount of extra time fixes it.
Toss them with the olive oil and a generous amount of salt only, and spread them in one layer with space between them.
Roast for 35–40 minutes, shaking the tray twice. They are ready when they are deep golden, visibly wrinkled and rattle like small stones when you shake the tin.
Toss them with the paprika, cumin and cayenne the moment they come out of the oven, while the oil is still hot enough to carry the spices. Spices added before roasting simply burn and turn bitter.
Let them cool completely on the tray — they crisp as they cool. Keep in an open bowl, never a sealed box: trapped steam softens them within hours.

Variations
Salt and vinegar
Toss with 1 tablespoon of malt vinegar and flaky salt instead of the spices. Same figures, completely different snack.

On a salad
Use them instead of croutons on any of the salads here. Roughly the same calories as croutons with three times the protein.
Coach's tip
A savoury, crunchy snack at 10 g of protein and real fibre, for the evenings when the actual craving is for texture rather than food. They lose their crunch after a day, so roast one tray rather than three.
